MULATAGA YABBYS ETOUFFES

Serves: 10 PEOPLE

Cooking Time: 25 mins.

  • 1kg yabbies cooked and peeled
  • 30g flour
  • 30g oil
  • 500ml fish stock
  • 50g oregano
  • 5g basil • 5g parsley • 5g garlic
  • 1 pinch cayenne pepper
  • 50g diced onion • 50g diced celery
  • 50g red capsicum diced
  • 50g green capsicum diced
  • 50g yellow capsicum diced
  • 50g spring onion diced
  • 20g spring onion diced
  • 50g carrots diced

Method:

Cook flour and oil till brown. Add onion and celery and cook till soft. Add fish stock, basil, oregano, thyme, parsley and garlic and cook for 30 minutes.

Strain sauce then add yabbies.

Saute the capsicum and carrots. Place yabbies and sauce on plate, top with capsicum, carrots and spring onion and serve.
