- Use freshly boiled water (not reheated or reboiled). Water quality is important - use spring water or rainwater if possible
- Warm the teapot -using steam or by rinsing with hot water.
- Measure the tea carefully into the pot, usually one teaspoon per cup (with green tea use less -see the brewing guide)
- Pour the boiling water over the tea. Stirring the teapot is optional - stirring gives a stronger liquor and flavour.

- Brew for the recommended time before pouring, usually 3 to 6 minutes, not more, depending on the tea. Do not let the tea 'stew' as this releases tannins. Please see our tasting notes for brewing
times.
- Brew in a pot, not a coffee plunger. Tea sinks and coffee floats. Plungers were made for coffee and usually retain traces of the coffee flavour. Use different teapots for green, flavoured and
black teas.
