Try these Tea Recipes

A WINTER WARMER
The recipe is for 4 cups.
Ideal for those cold winter days.

Spiced (Cha) Tea
    
5 cups water
     1 stick cinnamon
     3 cloves
     3 allspice berries
     3 cardamoms, crushed
     1 heaped teaspoon black tea (Assam or Ceylon
     Pekoe leaves of 4 teabags)

Simmer the water and spices for 5 minutes, bring to the boil and pour onto tea in a teapot.  Steep for 5 minutes.  Sweeten with honey, stir, strain and serve in colourful mugs.

Ice Tea

A SUMMER SOOTHER
Makes 4 glasses.
Refreshing and invigorating.

Iced Green Tea with Wildflower Honey
 
    1 heaped teaspoon green (gunpowder) tea or
      4 green tea teabags
      5 cups water
      2 tablespoons of wildflower honey

Place tea in a teapot, bring water to the boil and pour onto the tea.  Allow to steep for 5 minutes.  Strain and allow to cool to room temperature before adding honey and pouring over ice.  Serve in tall glasses, garnished with a sprig of mint.

This recipe can also be made with black tea such as Ceylon Pekoe or Darjeeling.
