Special
Spanish cooking classes.
Last
summer I returned to my small village Alcaraz, situated in
the heart of Castilla La Mancha, Spain. I spent six months
sourcing new recipes, with the help of two local village women,
Carmen and Maria. They were only too happy to share with me
the traditional cooking methods of the women in Alcaraz. I
learnt how to perfect the famous Potato Tortilla, make the
village Guisado and saw how they create varieties of soups
and sauces.
I
learnt so much in my time there. To my delight tomato dominates
many recipes and of course, every dish is accompanied with
pure virgin Olive Oil. Garlic is used often, not always, sometimes
after the dish is cooked, sometimes added during cooking,
sometimes little and sometimes in abundance. I saw how sometimes
the glut from the vege garden can spill over into the pot
and how all produce was used up and there was absolutely no
waste. These are the hints I would love to share with you
in my cooking classes.
Lessons
start with a minimum of five. I can organise classes of up
to 12 if you would like a larger group. When the lessons come
to an end we will take in the magnificent view across the
bay and taste our dishes with a glass of local Margaret River
wine.
