Mulataga Mussel Soup
Serves 4 people
Cooking Time: 20-30 minutes
   
2 Litres of Fish Stock with a few vegetable cubes mixed in.
2 kilos fo Fresh Mussels
2 Onions roughly chopped
1 Tsp Cayenne Pepper
1 Tsp Black Pepper Corns
3 Cups fresh green herbs such as Vietnamese Mint
Parsley and Garlic Chives
1 Tblsp of Tomato Paste
1/2 a bottle of Dry White Wine
2 Tblsp Olive Oil
   
Method
  1. On a medium flame place a large pot with a lid. Pour in the Olive Oil, Black Pepper and Cayenne Pepper, Stir well and allow to cook slightly.
  2. Pour in Fish Stock Lemon and Wine. Place lid on and allow to simmer for approximately 10 minutes.
  3. Stir in Tomato Paste and 2/3 of the Green Herbs. Leave the rest for garnishing. Last of all Place in the Mussels.
  4. Place lid on and simmer for three to five minutes.
  5. Serve in a large bowl with crusty Bread and some of the Green Herbs as Garnish.
