Mulataga Barramundi Salad

Serves 4 people
Cooking Time: 15 mins.

1kg barramundi fillets, steamed
½ cup freshly squeezed lime juice
1½ tablespoons of palm sugar (or white sugar)
5 tablespoons Thai fish sauce
1 whole chilli, seeded and finely sliced (or to taste)
1 large purple onion, sliced into very fine rings
1 bunch of coriander
   
Method
  1. Steam the barramundi for about 5 minutes or until fish turns opaque.
  2. Allow to cool and cut the barramundi fillets into bite-size pieces and place in a large bowl.
  3. Combine the lime juice, sugar, fish sauce and chilli and pour over the fish.
  4. Mix the purple onion through the fish.
  5. Garnish with sprigs of coriander.
  6. Serve Chilled.
