your Mulataga Yabby for cooking
If you intend to plunge live yabby into boiling water, ensure the liquid is boiling rapidly to ensure the instant demise of the crustacean. This is preferable from both a humane and a culinary standpoint.
| An
alternative - which avoids boiling - is to place your
Mulataga yabby in the freezer for up to three hours in
order to slow their metabolism. Then plunge a sharp, pointed knife into the centre of the head just behind the eyes. The crustacean will be killed instantly, ensuring tender flesh as well as humane treatment. Even if they wriggle for a little while, the yabby will definitely be dead. This is the method recommended by leading cookery writer Victoria Blackadder. |
