This is our first recipe, just for Peter.

Ian's famous Gambola Espagnola (Spanish Prawns).


Now the real trick in the successful execution of this meal follows. Firstly mix the oil, garlic, chilli and spring onion and leave for 30 minutes or more. The prawns should be as fresh as possible, and prepared with as little washing as possible.

Warm the bread in the oven, have the chilled wine served and a heavy based frying pan heated to almost smoking hot. Put in half the oil mixture and follow up with half the prawns. They should not spend more than 1 to 2 minutes in the pan. As soon as the prawns start to turn opaque in the middle, turn them over and get ready to serve. (Note: over cooking only takes 30 seconds, and a pan that is not hot enough will result in a prawn that is "floury".) Serve at the table and pour the oil from the pan onto the plate as well. Use the warmed bread to soak up the oil. Re-heat the pan and go for more when you are ready. Bon apetito.
