SULTANA CARAMEL PUDDING

1 cup SR flour
½ cup sugar
½ teaspoon salt
½ cup milk
2 table spoons butter
¼ cup sultanas
¼ cup chopped dates.
Sift together flour and salt int a mixing bowl.
Add sugar, milk, melted butter
Beat for one minute and stir in the sultanas and dates.
Pour into an ovenproof dish

SAUCE
1¼ cups water
2/3 cup firmly packed brown sugar
2 tablespoons butter
1 teaspoon grated lemon rind

Combine all the ingredients in a saucepan.
Bring to the boil, simmer for five minutes and pour over the mixture in the dish.
Bake on a moderate oven for 40 - 45 minutes.
