PAVLOVA

This is a fail safe version of Australia's national dish. I can't guarantee that it would work in a gas oven.

Preheat oven to 400ºF (200ºC).

Beat 5 egg whites until they are foamy.

Add:

¼ teaspoon salt
½ teaspoon cream of tartar

Keep beating the egg whites until they stand in limp peaks.

Gradually add:

1½ cups sugar

Keep beating until they are very stiff indeed.

Grease and flour a 9-inch pie plate, and spread the meringue in it, scooping it out of the middle and piling it a bit around the sides to form a shell.

Put it in the oven, turn off the heat immediately, and DON'T LOOK IN FOR 5 HOURS. Or overnight!!

Spread whipped cream over it and top with fresh fruit just before serving. The crust should be crisp with a marshmallow centre.

This is best not made in humid weather because it tends to go sticky
