4 oz butter
4 oz sugar
½ teaspoon vanilla essence
2 beaten eggs
8 oz self-raising flour
pinch salt
½ cup milk
Cream butter and sugar with vanilla.
Add the eggs
Fold in sifted dry ingredients alternately with the milk.
Butter and flour an 8" cake tin and pour in the mixture.
Bake on a moderate (400ºF or 200ºC) oven for 30 minutes.
I mostly just throw everything in and beat like crazy for a couple of minutes.
You can add cocoa for a chocolate cake, or instant coffee powder or divide into three and make a rainbow cake. Melted butter, cinnamon and sugar on top makes a coffee cake. Just do your own thing.
