This is a recipe which can be easily adapted to one serving. I am very flexible with the proportions and it always turns out well. It is very quick and easy to make.
INGREDIENTS
4 Pork chops or 8 pork steaks
Salt and freshly ground pepper
2 Teaspoons fennel seeds
2 Tablespoons olive oil
2 Ripe tomatoes, diced
2 Teaspoons minced garlic
1 Cup marsala
1 Cup red wine
METHOD
Season the port well and scatter the fennel seeds over them
Heat the oil in a heavy pan and add the chops to this
Cook them until they are brown on both sides, turning only once.
Remove them from the pan and then add the tomato and the garlic
Toss around for a minute to soften them and then add the wine and the marsala
Turn up the heat to high and reduce the sauce by half
Add back the chops, lower the heat and heat them through in the sauce, turning them over a couple of times
Turn off the heat, cover and leave the chops to relax for at least 4 minutes.
