ORANGE-BRAISED LAMB SHANKS
4 lamb shanks
1 tablespoon flour
1 teaspoon salt
2 tablespoons oil
2 tablespoons brown sugar
1 teaspoon ground ginger
1 tablespoon grated orange rind
1 teaspoon grated lemon rind
Juice of one orange
1 sliced orange
1 cup water
Roll the lamb shanks in the flour and brown them in the hot oil
Combine the remaining ingredients and pour over the shanks
Cover and simmer for about one hour
Add slices of orange during the last 10 minutes of cooking
Serve with rice or couscous
