CHICKEN & PRUNE TAGINE
4 large, skinned chicken pieces
1 tspn oil
˝ tspn ground allspice
˝ tspn pepper
1 tspn cinnamon
2 tspn cumin seeds
˝tspn ground nutmeg
1 tspn turmeric
200 gms pitted prunes
2 large onions, sliced
1 tspn fresh grated ginger
3 crushed garlic cloves
Salt
360 mls chicken stock
1 Heat oil and brown chicken pieces
2. Add allspice, pepper, cinnamon, cumin, nutmeg, turmeric, prunes, onions, garlic and heat until onions are soft
3. Add stock and salt. Reduce heat to very low and cook for 2 hours, stirring occasionally
4. Uncover and boil rapidly to reduce liquid
Serve over rice or couscous.
