To briefly answer your questions:
Studies have been done and published in the medical literature comparing growth rates and intelligence of veg vs non-veg. Bottom line, veg grow at a slower rate but eventually reach average height/weight etc. This is probably the way nature intended. Menses starts later etc. Neil Barnard has a good book on this. IQ in veg children is higher. Obesity is less frequent in veg, they live longer etc etc. The health reasons to be veg are very impressive. The average American gets way too much iron. Iron is probably associated with aging and cancer and other medical problems. See Barnard's book. Some top athletes are veg.
