Main line needs to fairly heavy, around 20kg, weight should be around 1lb depending on how strong the wind/current is. You need to be on or just off the bottom. Hook sizes vary from 4/0 up to 8/0 or even larger. Dhufish or Jewfish as some people call them are one of the most sort after of our deep-sea species. They make for excellent eating and are usually of great size. Baits consist of whole or cut fish, squid or cuttlefish. Try to keep your sinker within 1 meter of the bottom, around 45 meters depth on average. Dhufish tend to just hold the bait rather than hit it hard so waiting a few seconds can mean the difference between hooking up and having the fish spit the bait. A good trick is to place a mulie, head up inside a squid tube and then thread the hook thru the tube passing thru the eye of the mulie and then back into the inside of the tube with only the point protruding out of the squid. This has proven deadly on many deep-sea fish Undersize fish should have a small barbless hook  passed thru their bottom lip and then lowered slowly back to the bottom to be released. Tying the hook with cotton makes for easy release.
 
This rig is good for jigging using a bait or a jig type lure. Let the ball sinker run right up to the hook.
