Ingredients

Brigalow kit from Coles

2 kg dextrose

Brewing notes

Piched yeast 3 Dec, bottled 11 December.  First attempt at high alcohol brew using extra sugar.  Bottled with 50% extra carbonation sugar.

Tasting notes

On 18 Dec, quite flat in bottle, not carbonating.  Suspect stuck fermentation, due to too much alcohol killing the yeast.  Never did develop full carbonation in the bottle, and had an aley test which did improve a little.  Not as good a ginger flavour as the Welshpool one (Brew 7).  However, certainly did taste like it had significantly more than 5% alcohol, so it got drunk anyway.
