Brewing notes

Boil 2 L water, add brew booster, kit.  Add Pride of Ringwood hops and boil 15 mins, remove.  Add Cascade hops and boil 4 mins.  Take off heat, add Saaz hops and steep 1 min.  Pour into fermenter with Saaz and Cascade hops still in.  Make up to 22L total volume.  Wort temp 30 degrees.  Let cool, pitch yeast on 16 Sep, no action.  17 Sep shake fermenter, tighten seal on lid, bubbling starts.  24 September, not bubbling but under pressure.  Decant, bulk prime with 7 oz dextrose, bottle.

Tasting notes

Out of fermenter on 24 Sep- good body, complex strong hop flavours with good citrus and floral aroma.  Tastes like it should be pretty good.

1 October, 1 week old.  Limited gas, still very cloudy, but a bit of head.  Quite dark for pilsener, good body.  Slightly sweet from carbonation sugar.  Loads of hop flavour including up front bitterness, floral aroma, and lingering tangy aftertaste.  Not quite Little Creatures Pale Ale, but close and a jolly good beer, or at least it will be.

23 October – 4 weeks old.  Dark amber colour, still slightly cloudy, good head, lively bubbling in glass.  Floral on the nose, pleasantly bitter up front, lingering citrus and flowery hops in the middle and long lingering aftertaste.  For Simon, approaching the pinnacle of pilseners, from memory very close to Little Creatures Pale Ale (maybe a bit darker and a bit more body), and a damn fine beer, best home brew to date.  For Fleur, too much flavour.

17 November – A superb beer, this is what we make home brew for.

6 Jan –Less aroma, but still superb flavour, good carbonation.
