5 limes 100 g whole coriander seeds from Super Value Guildford Rd 200 g honey 300 g dextrose 400g maltodextrin from homebrew shop 500g rice malt from health food shop Coopers lager kit 60 g hallertau hops |

Peel lime zest, add to 2 L cold water bring to boil and boil 30 mins. Add dextrose, maltodextrin, rice malt, kit. Bring to boil. Add 30 g hallertau hops in stocking bag. Boil 20 minutes and remove hops. Add juice of limes, honey and bring to boil. Add 30 g hallertau hops in stocking bag, also cracked coriander seed in stocking bag. Boil 5 mins, then turn heat off and steep 15 mins. Transfer hops and coriander seeds to fermenter with cold water. Pour hot wort into fermenter through sieve to remove lime zest. Top up to 23 L, gives temp of 26 degrees. Rehydrate yeast in bowl with malt and warm water, once bubbling and frothy add to fermenter 6 October. Fermentation didn’t start straight away, left on light box overnight and by morning bubbling furiously at 26 degrees. 8 Oct stopped bubbling, SG 1.014. Gave it a big shake. 9 Oct still not bubbling, SG still 1.014. Decanted, bulk primed with 7 oz dextrose, bottled. |

ABV 5.5% 16 Oct -7 days old. Paul says less yeasty than out of fermenter, coriander strong flavour up front, honey strong, lime in the finish. Will be excellent when cleaned up and cold. Moderate hiss but no head, but gassing up. 24 Oct 2 weeks old. Golden amber colour, slightly cloudy but rapidly clearing up. Good hiss on opening, lively in the glass with good carbonation. Initially a big bubble head, but then settles to nice foamy ring. Spicy and honey on the nose. Flavours already starting to merge but get spicy coriander up front, honey and lime in aftertaste, with a lingering mild hop bitterness and lime zing. Possibly lime is understated compared to other flavours? Hard to distinguish any characteristics of the rice malt at this age. A truly excellent beer for Summer and spicy food. 16 Nov – An excellent beer, flavours merging, reasonably highly gassed, needs to be fully chilled. 25 Nov – Possibly honey flavour is now a bit lacking with lime dominant, probably a bit more honey next time, but still a very impressive beer. 28 Jan, Tim says bay leafy herby taste, and dominant lime, not much honey. Full of flavour, very distinctive, would stand up to hot food like a curry |
