Chinook Cascade Ale CCA13/12

 Ingredients

2 kg Joe White pale ale malt 4-5 EBC Grumpys crushed

0.3 kg wheat malt 4-5 EBC Grumpys crushed

0.25 kg Munich, IMC, 12 EBC, Grumpys crushed

0.5 kg Caramunich, 45 EBC, mortar and pestle crushed

2 kg DME from Grumpys

15 g Chinook at 12.2% = 20 IBUS for 60 min boil at 1.040

35 g Cascade at 6.3% = 25 IBUS for 60 min boil at 1.040

20 g Cascade at 6.3 % flavour (maybe 7 IBUs)

20 g cascade at 6.1% aroma 1 (maybe 3 IBUs)

20 g Cascade at 6.1% aroma 2

1/4 tablet Whirlfloc

Wyeast 1056

1 tsp bread yeast

Brewing notes

1 litre 1056 starter. Grains in pot, 7.5 l water at 78degrees get 66 degrees. In oven. 70 mins pull out of oven, temp 63 degrees. Add 2 l water at 80 degrees to mash out. Leave 5 mins. Pour 1 kg grain into colander on fermenter. Sparge 4 l water at 80 degrees quite fast using jug not ladle. Repeat 2 times. Get 15 l wort. Take sample and cool, sg 1.040 = 65% efficiency. Bring to boil, add bittering hops in stocking bag. 45 mins, add DME, bread yeast, whirlfloc. Bring back to boil. Add flavour hops, stocking bag. Boil 10 mins. Add aroma hops 1 stocking bag. Boil 4 mins. Add aroma hops 2 in stocking bag. Boil 1 minute. Cool in bath. Remove all hops bags. Add to fermenter, hose water, 22 l 32 degrees 1.048. Double drop for aeration, removing some trub. Put fermenter in sink for an hour or two, 26 degrees, pitch yeast on 12 Nov, total 23 l. 13 Nov, rapid bubbling, 25 degrees, add some ice to bath quick. 14 Nov 20 to 22 degrees. 17 Nov 20 to 22 degrees, using ice in water. 19 Nov, sg 1.018, no bubbling. Give a big shake. Lift out of water. 21 Nov, 20 to 22 degrees, 1.018 slow bubbling. 24 nov 1.014. decant to jerry can, into fridge. 13 December, out of fridge, decant on to 120 g dextrose dissolved in boiling water, stirred, bottled. Get 20 l in bottling bucket. Store inside. After 4 days give each bottle a good shake and store on shelf.

 

Tasting notes

ABV 4.8%

Boiled hop IBUs (gravity corrected but probably overestimated by 10 to 20% because of stocking bag) 45

Including flavour and aroma hops 55 IBUs

Allowing for loss of efficiency in stocking bag maybe 40 to 45 IBUs total.

29 Dec. Good hiss on opening, reasonable bubbling in glass. Not clear, looks a bit like chill haze. (Actually, no, checked a bottle at room temp which is also slightly cloudy). Nice creamy foamy head sticking to side of glass, well retained. At this age, malt definitely takes a back seat to the hops, but not in a bad way. Grapefruit aroma. Some malt up front then citrusy grapefruity strong hop flavour with a lot of bitterness but not quite too much.Aftertaste is understated grapefruit. An excellent beer. Taste test against stubbie of LCPA. LCPA - head is not as creamy as mine, colour slightly lighter, a little more clear than mine (but not a lot). Taste is very very very similar. Maybe slightly less grapefruit in LCPA, maybe a few IBUs more in LCPA. They are already close to indistinguishable but I reckon 1/3 IBUs chinook, 2/3 IBUs cascade for the 60 min hops, a bit more late or dry hopped Cascade for more aroma and maybe a little more wheat malt and my (Jayses) chinook cascade ale would be identical to LCPA.

9 Jan Not clear, nice colour, good gas on opening, busy small bubble carbonation in glass, fine foamy head with good retention. Wheat malt and grapefruit aroma.Light malt and strong bitterness up front, then tangy citrusy hop flavour, with lingering bitterness that sort of tingles on the tongue. Very nice and quite well balanced in a hoppy sort of way.

11 March. Pretty much as above, although now a bit overgassed.

19 April. A little overgassed but fits in the jug. Doesnt have the same in your face hop flavour and aroma, but still a well bittered ale, flavours of grapefruit and citrus, just enough crystal sweetness to balance the hops, well balanced between malt and hops, nice clean lingering citrusy aftertaste.

19 June. Quite overgassed. Much more subdued now. Clean malt up front, good citrusy bittering, but a slightly bitter aftertaste which maybe is not hops. Not sure what it is.

20 July. As above, overgassed. Same aftertaste, maybe it is hops.
